A Grandparent’s Love Turned Legacy
Zoe’s Coffee began with love—love for family, community, and, of course, a great cup of coffee. When we started this journey, my husband Vaughn and I had no idea how much it would mean to us and the people around us. Our granddaughter Zoe was just three years old when we bought our first coffee kiosk. Naming our business after her was our way of expressing the deep love we had for her and our growing family.
A Leap of Faith
In 2008, Vaughn noticed a small coffee kiosk for sale at Westminster City Hall. He had spent 32 years working for the City of Westminster, but something about this opportunity felt right. We decided to take a leap of faith, and Zoe’s Coffee was born. Took over three years for a chance encounter with the City Manager of Commerce City which led us to expand. In the spring of 2009, we moved Zoe’s Coffee to the Commerce City Civic Center, where we continue to serve to this day.
Carrying on Vaughn’s Legacy
Life changed when Vaughn passed away, but his dream lives on. Every day, I keep Zoe’s running to honor him—to continue the warm, welcoming space he helped create. Zoe’s Coffee isn’t just a coffee shop; it’s a tribute to family, hard work, and the connections we build over a great cup of coffee.
